Sweet Pork Dippers

As promised, a delicious recipe to use up the rest of the sweet pork and the cilantro ranch dressing I posted a couple days ago.  I basically always plan to make this recipe the day after I make the pork salad recipe.  It is one of those things that kind of surprises you with how much you love it, even though you've had it a bunch of times before.  It is always so yummy!  And if you're just using leftover pork and dressing like I usually do, it makes for a super easy dinner to throw together.  These make great appetizers, too if you want to go that route.  You really can't go wrong here.

Sweet Pork Dippers

Time to Prepare: 15 minutes (when using pre-made pork)
Number of Servings: 4-6

  • 12 (7") flour tortillas
  • 3 cups sweet pork (see recipe in previous post)
  • 4 oz shredded Monterey Jack cheese
  • Cilantro Ranch dressing (see recipe in previous post)
Preheat oven to 375 degrees.  Lightly grease a baking sheet and set aside.

Place three tortillas at a time between damp paper towels and warm in the microwave for 30 seconds, just to soften.

Spread 1/4 cup pork across the middle of each tortilla and roll tightly.  Place seam-side down on the prepared baking sheet.  Sprinkle the tops with shredded cheese and bake until cheese is melted, about 10 minutes. 

Serve with cilantro ranch for dipping.
