- 1/4 cup olive oil
 - 2 T brown sugar

 - 1 T lemon juice
 - 1-2 cloves garlic, minced
 - 1-2 tsp freshly grated ginger
 - 1 tsp kosher salt
 - 1/2 tsp pepper
 - 1/2 cup finely diced melon (honeydew, cantaloupe, or galia)
 - 1/2 cup finely diced apple
 - 1 small mango, finely diced
