7/9/2011 Basket - Pear & Blue Cheese Salad

Pear & Blue Cheese Salad
Uses: Spinach, pears, mushrooms

First I made a quick dressing in the bottom of the salad bowl. I whisked together 1 T. apple cider vinegar, 2 t. mustard, 3 T. olive oil, 1/2 t. sugar, and seasoned with salt and pepper. Then I added spinach and chard leaves, sliced pears, sliced mushrooms, candied pecans, and chunks of blue cheese.

When ready to serve, toss the salad with the dressing at the bottom of the bowl.
