8/11/12 Basket - Almost Stuffed Peppers

Almost Stuffed Peppers
Uses from this basket: Green pepper, tomato
Other produce: Onion

  • 1 pound ground beef
  • 1 large tomato, diced
  • 1/2 medium onion, thinly sliced
  • 3 medium green peppers, cut into 1/4 inch slices
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp Italian seasoning
  • 1/3 cup tomato or pasta sauce
  • 1/4-1/3 cup steak sauce
  • 3 cups cooked rice
In a large skillet, brown beef.  When beef is mostly cooked, stir in tomatoes and cook 2-3 minutes.  Stir in onion and continue cooking for 1-2 more minutes.  Stir in green pepper and seasonings.  Cook until peppers are crisp tender.  Stir in tomato sauce and steak sauce.  Cook until mixture begins to bubble slightly.  Stir in rice until well mixed.  Serve warm.
