7/30/2011 Basket - Eggplant Parmesan

We got two eggplants last week, so we made eggplant parmesan. I'd never made it before, but it turned out pretty well.

    We made eggplant parmesan as well. Sam loved it. The kids ate it fine. But I thought it was disgusting. Strange, huh?!
